Datasets: Import markdown from /datasets directly

• Folders under /datasets/ should have a unity_readme.md file
• These will be imported into the documentation via scripts/datasets.py
• The path of the dataset determines the docs markdown filename
• Renamed existing files to match
• Separted the eggnog datasets into separate files instead of multiple versions per file
• Created placeholders for some datasets not yet fully documented
